Za’atar

 2 tbsp toasted sesame seeds
 2 tbsp sumac
 2 tbsp dried thyme
 1 tbsp dried oregano
 1 tbsp dried marjoram
 1 tbsp grounded cumin
 1 tsp sea salt or rock salt

Preparing the Za'atar spice blend

Roast the sesame seeds in a non-stick pan and let cool
Mix the dried herbs with the sumac and cumin and salt.
Finely grind the sesame seeds with the other herbs and spices in a blender or food processor.
The spice blend goes well with pita bread and Middle Eastern dishes.
