Spätzle with pork neck and broccoli

 150 g pork neck
 1 tsp minced ginger
 2 cloves garlic
 1 tbsp soy sauce
 50 g broccoli
 100 g Spätzle

a cup of bone broth

 a touch of chili flakes
 2 tsp sesame oil
 1 egg
 salt to taste
 10 g potato starch.

Wash the pork neck a little in cold water, then pat it dry with a (clean) kitchen towel, cut it into small pieces and add it to a bowl with ginger, garlic, egg, a teaspoon of sesame oil and 10 grams of potato starch.

Let it sit in the fridge for 10 minutes.

After the time has passed, we take a normal frying pan or if you have a Wok it is better, let it heat up with very little cooking oil. We add the meat and fry it until it gets a dark golden color, add the Spätzle and mix intensively.

Add the remaining ingredients and the bone broth, and let it simmer 2-3 minutes ,except 1 teaspoon of sesame oil and chili flakes.

The method is Stir Fry, often found in Asian cuisine.

Meanwhile, the sauce will reduce, adjust to taste with salt and you can add sesame oil and chili flakes.
