Rustic Chicken Thighs with Garden Peas

 1 kg green peas
 1 large onion
 1 carrot
 4-5 chicken upper legs
 1 bunch dill

1. Brown the chicken

Heat oil in a deep skillet or pot. Sear the chicken thighs on both sides until golden. Remove and set aside.

2. Sauté the aromatics

In the same pan, add chopped onion and garlic. Cook until soft and translucent.

3. Build the sauce

Stir in tomato paste, paprika, wine, and stock. Let it simmer for 5 minutes to blend the flavors.

4. Add chicken and peas

Return the chicken to the pan, add the peas, and cover. Simmer gently for 25–30 minutes until the chicken is tender and the sauce thickens slightly.

5. Finish and serve

Season with salt and pepper. Sprinkle with fresh herbs before serving.
