Melt butter, flour, milk and nutmeg. That’s all you need for this sauce, which is also called white sauce. Rich, creamy, béchamel sauce is not used as such but cooked in the oven, in combination with macaroni pudding, lasagna or on a moussaka.

Heat the butter in a saucepan. When it has melted, add the flour and mix well with a whisk. It will start to smell great! Gradually add the milk and mix vigorously until you get a smooth cream. Add salt, white pepper and grate a little nutmeg.
