For the cake layers (3 layers):

 9 eggs (separated)
 9 tbsp sugar
 6 tbsp all-purpose flour
 15 tbsp ground walnuts
 1 tbsp baking soda, quenched with hot milk
 A pinch of salt

For the cream filling:

 9 egg yolks
 250 g powdered sugar
 250 g unsalted butter (room temperature)
 3 packets of vanilla sugar or 1 tbsp vanilla extract

Cake Layers

• Beat 3 egg whites with a pinch of salt until stiff peaks form.
• Gradually add 3 tablespoons sugar, 2 tablespoons flour, 5 tablespoons ground walnuts, and the baking soda quenched with hot milk.
• Gently fold the mixture with a wooden spoon to keep it airy.
• Bake each layer separately on the back of a baking tray, at medium heat, until lightly golden.

Cream Filling

Cook the egg yolks with powdered sugar and vanilla over a double boiler, stirring constantly until thickened.

Let the mixture cool completely, then mix it with the whipped butter until smooth and creamy.

Assembly

Spread the cream evenly between each cake layer.

Top with crushed walnuts or grated chocolate for decoration.
